Distribute the ice cream scoops among four individual plates and refrigerate
In a small saucepan, heat the jelly, sugar, water, and lemon juice, stirring occasionally, until a slightly thickened sauce forms (about 5 minutes)
Add the pears, stir, and let it warm up well
Pour the brandy into a metal shell with a long handle and heat it directly over the flame until it's on fire
Pour the flambéed mixture over the pear mixture, letting the flames die out
Distribute the fruit among the plates with the ice cream and serve immediately.
