500g of ground beef (chuck, round, or sirloin)
2 green scallions, chopped
2 ripe tomatoes, diced

Heat the olive oil in a large skillet over moderate heat
Add the onion and garlic and cook, stirring occasionally, until they start to brown
Add the ground beef and stir with a wooden spoon until it's well broken up and separated
Season with salt and black pepper
Increase the heat and continue cooking, stirring occasionally, until the meat is cooked through but still juicy
Add the chopped scallions and diced tomatoes
Stir to combine and remove from the heat
The tomato should be slightly warmed through, but not overcooked
Serve hot, approximately 286 calories per serving
