Use a sharp knife to make an incision in the larger side of the picanha

Carefully cut almost all the way through the meat with the blade

Season the picanha with salt and pepper to taste

Place your hand inside the pocket and pull the point outwards, turning it inside out
The fat will remain on the inside

Stuff the meat with cheddar cheese and bacon

Wrap the picanha in aluminum foil and put it in a preheated oven at 200o to roast

Remove the foil and let the meat finish browning in the oven.
