6 medium peppers
2 cups cooked rice
2 cups cooked chicken, cut into small pieces
1 cup chopped fresh parsley
2 tablespoons finely chopped onion
3/4 cup mayonnaise (use store-bought for convenience)
1 tablespoon olive oil
1 tablespoon vinegar
1/2 teaspoon salt
black pepper to taste
6 medium peppers

Remove the tops of the peppers, remove the seeds and cook the peppers in boiling salted water for about 8 minutes
Drain
Mix the rice with the chicken, parsley, onion
Combine the remaining ingredients and add to the rice mixture, mixing lightly
Stuff the peppers; place them in a baking dish 25 x 15 x 3 cm
Add 1 cm of water to the baking dish
Bake in a moderate oven for 30 minutes
Serve 6 servings.
