In a pressure cooker, combine the garlic cloves, Anaheim peppers, and large potatoes
Cover with olive oil
Secure the lid of the pressure cooker and cook over medium-high heat for 20 minutes or until the roast chicken is golden brown
Remove from heat, release the pressure, and serve.
