Cook the potato with a pinch of salt
Cut it into small cubes
Place in a non-stick baking dish not too shallow
Saute the cod with the tomatoes, onion, garlic, and black pepper, using a little olive oil
Add the capers and place over the potatoes
Cover with a thick layer of store-bought mayonnaise
Sprinkle generously with grated Parmesan cheese
Bake in a moderate oven for about 30 minutes.
