1 large pre-made pizza crust or 4 small ones
1/2 can of black plum preserves, strained
1/2 cup shredded coconut
2 tablespoons butter or margarine

Brush the pizza crust with butter or margarine
Drain the plums and reserve 1 tablespoon of the syrup
Remove any seeds and chop the plums
Mix with half of the shredded coconut
Cover the crust with the plum-coconut mixture and sprinkle with remaining coconut
Bake in a moderate oven (170°C) for about 15 minutes
Result: 1 large or 4 small pizzas
