MAKE THE BASIC PIZZA CRUST (see page 42)
Brush the two crusts with a little olive oil
Cover each one with half of the brie cheese, leaving a 1.5 cm border
Place in a moderate oven (180°C), preheated, for 10 minutes
Arrange the salmon slices over the cheese
Brush again with olive oil
Spread the onion and drizzle with the remaining oil
Season with salt, return to the oven, and bake for 20 minutes, until the crust's edge turns golden
