For the dough
2 packages of baking powder for bread (30g)
2 cups of warm water
8 cups of all-purpose flour (1kg)
2 tablespoons of sugar
2 teaspoons of salt
1/2 cup of olive oil
For the broccoli filling
1/2 cup of olive oil
8 cloves of garlic, minced
2 small broccoli florets (500g) slightly blanched, separated into florets
2 containers of catupiry cheese
1 cup of grated Parmesan cheese
Salt and black pepper to taste
For the bell pepper filling
1/2 cup of olive oil
6 cloves of garlic, minced
8 small tomatoes, peeled and seeded, cut into small pieces
2 green bell peppers, 2 red bell peppers, and 2 yellow bell peppers, cut into long strips
500g of mozzarella cheese in slices

Dissolve the baking powder in warm water until it dissolves well. Reserve
In a large bowl, combine the flour, sugar, and salt
Mix with the tips of your fingers until the dough comes together and is elastic but not sticky
Let the dough rest for 1 hour on a lightly floured surface, covered with plastic wrap
Prepare the fillings: start with the broccoli filling
In a medium skillet, heat some olive oil over low-medium heat
Add the garlic and sauté until golden brown
Add the broccoli florets and sauté for 15 minutes
Season to taste and reserve
Do the same for the bell pepper filling
On a lightly floured surface, roll out each piece of dough into a circle about 35cm in diameter
Place the dough onto a baking sheet lined with parchment paper
Spread some olive oil over the dough, then add the broccoli filling, followed by the catupiry cheese and Parmesan cheese
Bake for 15 minutes at 250°C or until the edges are lightly golden brown
Repeat the process with the rest of the fillings
Make a total of 4 pizzas (8 slices each)
