Cook the spinach with a little water
Drain and squeeze well
Chop
Heat the olive oil and sauté the garlic until golden brown
Add the spinach and mix well. Reserve
Prepare the polenta according to the basic recipe
Combine the reserved spinach mixture and place in a refrigerated mold
Sprinkle with grated Parmesan cheese
Place in a moderate oven (350°F) and warm thoroughly
