1 Italian eggplant
1 cucumber
1/2 yellow squash
1/2 red bell pepper
1/2 green bell pepper

4 whole garlic cloves
Salt and oil to taste

Slice the cucumber and zucchini into thick diagonal slabs
Cut the bell peppers into large strips
Peel the garlic cloves and leave them intact
In a skillet with some oil, grill the zucchini and bell peppers separately
Sprinkle them with salt and reserve them warm
In the same skillet, add a drizzle of oil and caramelize the garlic cloves
Set aside
Grill the eggplant cut in half lengthwise and assemble the sandwich
Add the grilled vegetables, minced garlic, and drizzle with more oil
Serve immediately
