Heat the olive oil in a pan and sauté the onion and sweet herbs until golden brown
Add the carrots, bell pepper, and green onions
Season with salt
Cook over low heat, stirring constantly, until the vegetables are tender but still crunchy
Dissolve the cornstarch in water, add to the pan, and stir constantly until slightly thickened
Spread the polenta onto a flat baking dish
Allow it to cool
Slice into portions
Assemble on a serving platter and cover with the sauce
Bake in a moderate oven (180°C) until heated through
