1 1/2 cup cornmeal
1 cup cold water
3 cups boiling water
1 tablespoon salt

In a saucepan, combine the cornmeal and cold water
Heat over medium heat in a bain-marie
Add boiling water and salt
Stir well
Cook, stirring constantly, for about 5 minutes, until it comes away from the sides of the pan
Spread the polenta onto a warm, buttered plate and let cool for 2 to 3 minutes
Cut into slices or squares
(For a perfect cut, use a twine, moving as if you were using a saw.) Serve with sauce, accompanying chicken or fish
Yield: 6 servings.
