Season the fish with salt and black pepper
Place the olive oil or walnut oil in a skillet and add the fish fillet
Sprinkle all the seasonings and lemon zest over the fish
Cook over low heat
Cook, covered, for 3 minutes
Add water and cook, covered, for an additional 15 minutes
Serve 4-5 people.
