Add the egg to the mixture
Roll it out on a floured surface to obtain a rectangle about 23 x 35 cm
Mix together the mustard, ground cloves, and allspice
Sprinkle over the ham
Place the ham in an oiled baking dish
Cover with torte mixture and press firmly around the entire lower part of the ham
Make slashes on the surface of the torte mixture, without cutting it, forming lozenges
Pierce half of the lozenges with a fork (always one at a time)
Mix together the yolks and water and brush over the torte mixture
Bake in a moderate oven for 1 hour and 30 minutes
Let cool and then refrigerate until serving
When serving, garnish with star-shaped red pepper flakes in brine.
