Remove the ham's rind and leave all the fat
Fry well and cut off all the surface fat in a lozenge shape
Place a sprig of parsley on each lozenge
In part, mix the rum, passionfruit, and corn syrup
Place this mixture over the ham and bake in a moderate oven (180°C) that has been preheated for about 2 hours, occasionally basting with the created sauce
Remove the tender from the baking dish and place the sauce in a bowl
Refrigerate for about 30 minutes
Remove the remaining surface fat and place the rest of the sauce in a saucepan
Add dissolved cornstarch to a little water and cook, stirring constantly until thickened slightly
Serve with ham
If desired, serve passionfruit slices and bananas with puff pastry (recipes available) as accompaniment
