Mix the cooked rice with remaining ingredients, stirring carefully
Pour into 8 individual molds and steam in a water bath for about 25 minutes or until the center is almost set
Beat the egg white until fluffy
Add the sugar gradually, beating well
Place dollops of whipped cream on top of the pudding and bake again to brown the topping
Serve warm
