1/4 cup of uncooked rice
2 cups of milk
1 pinch of salt
2 tablespoons of butter
2 eggs
1/3 cup of sugar
2 teaspoons of ground nutmeg

Form a refractory container with a capacity for 2 liters

Combine the grapes, rum, lemon juice, and lime zest
Let it sit for 30 minutes

Cook the rice with milk and salt for an hour in a semi-covered pot, stirring occasionally
Remove from heat and add butter
Beat the egg yolks in a blender and mix them into the rice
Let it cool, then add the reserved grapes and preheat the oven

Beat the egg whites, combine with sugar and nutmeg, beating constantly
Mix into the rice
Place in the refractory container, sprinkle with remaining nutmeg and bake in a water bath for 30 minutes.
