3 egg whites
1/4 teaspoon (or to taste) of tartar cream powder (available at supermarkets)
a pinch of salt
1/2 cup sugar
1/2 tablespoon grated orange zest
Orange Sauce
Orange Sauce: 1 tablespoon cornstarch
1/2 cup sugar
a pinch of salt
1 cup freshly squeezed orange juice
1 tablespoon freshly squeezed lime juice
1 egg yolk
1 tablespoon butter
3 egg whites

Orange Sauce
Orange Sauce: 1 tablespoon cornstarch

Beat the egg whites until they become frothy; sprinkle with tartar cream powder and salt
Beat to a firm snow-like consistency
As you add the sugar, continue beating well
Add the grated orange zest
Pour into a rectangular or round baking dish and place in a hot water bath
Bake in a moderate oven for 3/4 hour or until done
Remove from the oven and let cool
When serving, unmold and top with Orange Sauce
Serves 4
Orange Sauce: Mix cornstarch, sugar, and salt
Add orange juice and whisk well; bring to a simmer and cook until thickened, stirring constantly
Add lime juice and slowly pour over the whipped egg yolk
Cook for an additional minute and add butter
Serves 1 1/4 cups.
