In a bowl, mix the sugar with the flour and cinnamon
On the side, beat the 2 eggs with the yolk, sherry wine or Madeira wine, and lemon juice and grated rind
Add the egg mixture to the dry ingredients, alternating with milk, and stir until the sugar is dissolved
Add the 2 beaten egg whites and stir carefully
