1 cup of bread crumbs from morning toast

Mix the bread crumbs, sugar, cinnamon, lemon juice, and 1 grated lemon zest
Lightly grease a refractory mold
Layer peaches and the bread crumb mixture in the mold, ending with a layer of peaches
Brush the top with melted butter or margarine and cover tightly with aluminum foil
Place the water pan in the pressure cooker and then the mold
Close the valve and cook for 15 minutes
Immediately submerge the mold in cold water
Serve at room temperature
If desired, add 1/2 cup of dried apricots to the peach mixture
Serves 4-6.
