8 slices of peaches cut in half
2 tablespoons of butter or margarine
1/4 cup of raspberry gelatin, or other flavor of your choice
3 cups of milk
7 eggs
1/4 cup of sugar
1 egg yolk
1 pinch of salt
3 teaspoons of vanilla

Spread butter on one side of the peach slices
Line the bottom and sides of a round refractory dish with the peach slices
(Place the slices with the buttered side facing the dish.) Spread gelatin over the peach slices
Put the dish on a baking sheet
Heat milk in a medium saucepan
While this is heating, beat eggs, sugar, egg yolk, and salt in a large bowl until smooth
Gradually add hot milk, whisking quickly
Add vanilla, whisking carefully to avoid forming foam
Pour over the peach slices and let sit for 10 minutes to allow peaches to soften slightly
Preheat oven to moderate temperature (180°F)
Put baking sheet with dish in the middle of the oven
Add boiling water to baking sheet until it reaches halfway up the dish
Bake until custard is firm on top and lightly golden (takes about 70 minutes)
Remove from water and let cool
Refrigerate
Can be prepared 2 days in advance
Remove from refrigerator one hour before serving
Optional: decorate with gelatin
