Peel and cut the pumpkin into small cubes
In a pan, fry the garlic in butter until golden, add the pumpkin and stir well
Add salt and pepper
Cover the pan, reduce heat and cook for 5 minutes
Remove from heat and add green onion and parsley, stir to combine
Serve in 4 portions.
