In a pot, combine the sweet potatoes or yams, onion, carrot, and water
Add salt and black pepper (optional)
Bring to a boil over medium heat
Reduce the heat, cover, and simmer for 30 minutes
The soup should be tender
Use an immersion blender to puree the soup until smooth
Transfer the soup back to the pot, add the reserved sweet potatoes or yams, butter, and milk
Reheat and adjust seasoning as needed
Serve immediately
