Pastry
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon baking powder
1/4 cup unsalted butter
1 egg
Filling
2 cups crispy bacon, diced
1 tablespoon olive oil
1 small package grated Parmesan cheese
1 cup grated cheddar cheese
3 cups heavy cream
3 eggs
Salt and black pepper to taste
Pastry

Mix the flour with salt and baking powder
Add the butter cut into pieces, until it forms a thick paste
Add the egg, until it forms a ball and doesn't stick to your hands
Wrap and refrigerate for 15 minutes
Remove from refrigerator and grease the bottom and sides of a pie dish
Cover with beans and bake in a medium oven for 25 minutes, approximately
Remove the beans and let cool
Filling: caramelize the bacon in olive oil
Remove from skillet and drain on paper towels
Put the bacon in a bowl and add the Parmesan and cheddar cheese
Beat the eggs and add heavy cream
Season with salt and black pepper, then reserve
Place the bacon and filling mixture on the baked pastry crust
Bake in a medium oven until golden brown.
