100g of smoked bacon, chopped
1 large onion, chopped
4 cloves of garlic, minced
2 green and 2 red bell peppers, chopped
6 ripe tomatoes, cut into pieces
3 3/4 cups of black beans, soaked overnight (500g)
3 cups of water
1 cup of coconut milk
1 ripe banana, sliced
1 tablespoon of chili sauce
Salt to taste

Heat the olive oil in a large pot over medium heat
Add the smoked bacon, onion, garlic, and bell peppers
Cook for 5 minutes
Add the tomatoes, black beans, water, and coconut milk
Bring to a simmer
Cover the pot and cook until the flavors meld together
Stir in the sliced banana and chili sauce
Season with salt to taste
Simmer for an additional 15 minutes
Serve hot
