12 eggs, lightly beaten and strained
2 cups of fresh coconut flakes

Grease a round mold with a diameter of 20 cm with butter and dust with sugar. Reserve
In a saucepan, combine the sugar and water
Heat over low heat and stir only until the sugar dissolves
Let it boil without stirring for 5 minutes to obtain a thick syrup
Add the unsalted butter, remove from the heat, and let cool
Mix in the eggs and coconut flakes well
Pour the mixture into the prepared mold and spread evenly
Place this mold inside another larger mold filled with cold water (bain-marie)
Bake in a moderate oven preheated to 180°C until a toothpick inserted in the center comes out dry
Let it rest for 12 hours.
