Prepare the stuffing: in a medium saucepan, bring to high heat the turkey breast pieces, onions, garlic, salt, curry powder, tomatoes, bay leaves, and olive oil

Reduce the heat, cover, and cook until the turkey is tender (about 35 minutes)
Remove from heat
Take out the turkey from the saucepan and let it cool (reserve the sauce)
Debone it, cut into small pieces, and reserve
Dissolve the flour in water and add to the sauce
Cook over medium heat, stirring occasionally with a wooden spoon, until thickened (about 15 minutes)
Add the bell pepper cubes and turkey, mix well, and remove from heat
Let it cool and fill the turkey breast
Prepare the dough: preheat the oven to 180°C (medium)
In a medium bowl, place the flour and make a depression in the center
Add the remaining ingredients and mix well with a fork
Knead with your hands until you get a homogeneous mass
Divide it into three equal parts
With 2/3 of it, line an opening mold of 25 cm diameter by pressing with your fingers
Curl the edges of the dough with a knife and fill it
With a rolling pin, open the remaining dough on a floured surface
Cover the filling with the dough, pressing the edges to close the turkey breast well
Mix the egg yolk with the coffee and brush the surface of the dough
Put in the preheated oven until golden brown (about 35 minutes)
