Dough:
1 biological yeast tablet (15g)
2 tablespoons of sugar
1 tablespoon of salt
1/4 cup of olive oil
1 cup of warm water
1 egg
3 cups of all-purpose flour
1 whipped egg white for brushing
Oregano to sprinkle.
Filling:
150g of thinly sliced ham
150g of white cheese thinly sliced
2 tomato slices tempered with olive oil and oregano
200g of catupiry

In a bowl, combine the yeast with sugar and salt
Add the olive oil, egg, and mix well
Gradually add the flour and work the dough until it's homogeneous
If needed, add more flour
Knead and divide into 12 portions
Cover and let it rise to double its volume
Unroll each piece with a rolling pin and fill with ham, white cheese, tomato, and catupiry
Roll up and close the ends
Place in an oiled baking dish and let it rest for another 20 minutes
Brush with egg, sprinkle with oregano, and bake at 200°C for about 30 minutes.
