salt and black pepper to taste
"1 cup grated cheddar cheese", "1 pineapple or 4 small ones, or 4 ham slices"
4 slices of cheddar cheese cut into strips

"1 cup grated cheddar cheese", "1 pineapple or 4 small ones, or 4 ham slices"
4 slices of cheddar cheese cut into strips
Mix all ingredients except the parsley and cheese strips
Cut the pineapple in half lengthwise
Place each half on aluminum foil with the rind facing down
Spread the beef mixture over the pineapple
Lift the foil around the pineapple, without covering it tightly to form a receptacle
Place it in a baking dish and bake at moderate heat (170°C) for 25 minutes
Arrange the cheese strips over the pineapple and bake for an additional 5 minutes
To serve, cut each half into three pieces or serve one-third of a pineapple per person
Serve with aluminum foil
Dishes well for 6 servings.
