Roll 12 slices of smoked ham into a cylindrical shape, sealing the edges with butter; refrigerate until firm
Soak 1 sheet of red gelatin and 5 sheets of white gelatin in cold water for a few minutes
Add 2 cups of boiling water to dissolve the gelatin, then stir in 1 tablespoon each of sugar and lemon broth
Strain the mixture through a clean cloth
Dice 2 mangos into small cubes and mix with the gelatin; pour the mixture into a bowl and refrigerate until firm
Make the cream by whipping heavy cream until stiff; strain the eggs and add to the cream, whipping until smooth
Add chopped hard-boiled eggs and pickled peppers to the cream
Assemble each serving by placing a fresh lettuce leaf in a cup, topping with a dollop of cream, then placing a cylinder of smoked ham on top, surrounded by gelatin; refrigerate before serving
