Clean the duck and cook it in a pot with water, along with prosciutto, pork ear, and chorizo
When all the meats are cooked, remove them from the broth
Season the broth with salt, pepper, and lime juice, then add butter
Pour in the necessary water to cook the rice
As soon as the broth starts boiling, add well-rinsed and drained rice
Let it simmer for a bit, then transfer it to an earthenware dish and put it in the oven
When the rice is cooked, cut the duck into pieces, as well as prosciutto, chorizo, and pork ear into small pieces
Garnish with lime zest
Serve the rice directly from the earthenware dish in which it was cooked.
