In a blender, puree the passion fruit segments to obtain 1 cup of pulp
Mix with sugar and mint leaves until the sugar is dissolved; let it cool
Remove the mint leaves
Combine the juices and grated peels
Chill in the refrigerator
Just before serving, add mineral water
