Heat the olive oil and sauté the onion
Add the tomato and cook for five minutes
Add the rice and parsley and stir for another five minutes
Add the meatballs, ricotta cheese, and salt to taste
Gradually add the hot water while stirring occasionally to prevent the meatballs from breaking apart
Remove from heat and serve immediately.
