For the sauce
3 tablespoons of butter (45g)
1 large onion (150g) finely chopped
2 tablespoons of all-purpose flour
1/2 cup of milk (120ml)
1/2 teaspoon of prepared mustard
1/2 teaspoon of salt
1/2 teaspoon of paprika
1 fillet of snapper weighing 1.5kg
1/2 teaspoon of salt
A pinch of black pepper
For the sauce

Preheat the oven to 400°F (hot)
Prepare the sauce: in a medium pan, melt the butter over medium heat
Add the onion and cook, stirring occasionally, until softened (about 5 minutes)
Add the flour and stir until golden brown
Combine with milk and mix until smooth
Add remaining ingredients and cook, stirring occasionally, until simmering
In a large serving dish, season the snapper with salt and black pepper
Pour the sauce over the fish and cover with aluminum foil
Place in the preheated oven for about 35 minutes, or until the fish flakes easily when tested with a fork
Remove the foil and serve immediately in the same dish
