4 eggs (whites and yolks separated)

Preheat the oven to 200°C (hot)
Grease a baking dish of 26 cm x 40 cm with margarine and set aside
Prepare the dough: in a blender, beat the whites until they become soft and fluffy
Gradually add the sugar and beat until firm peaks form (approximately 3 minutes total)
Add the yolks and beat until a creamy and smooth mixture forms (approximately 2 minutes)
Sift the wheat flour with the active dry yeast over the egg mixture and mix delicately with a spatula until the dough becomes homogeneous
Place the dough in the prepared baking dish
Bake in the preheated oven until lightly golden brown (approximately 25 minutes)
Let it cool
Dust the plate with sugar
Unmold the cooled cake onto the plate and soak with the coffee-sugar mixture
Set aside
Prepare the filling: in a blender, beat the heavy cream until soft and fluffy
Gradually add the sugar and beat until firm peaks form (approximately 2 minutes)
Don't beat, add the grated lemon zest and mix
Add the banana slices and mix delicately
Spread the filling over the reserved cake dough, and with the help of the plate, roll it up starting from the smaller side
Carefully place it on a serving plate, cover with plastic wrap and refrigerate (approximately 1 hour)
