Preheat the oven to hot (200°C)
Grease a 23 cm x 34 cm baking dish with butter
Make the dough: in a stand mixer, beat the egg whites until stiff peaks form
Add sugar and yolks and beat for an additional 2 minutes, until a light and fluffy mixture forms
Add all-purpose flour and yeast, stirring slowly with a spatula
Place the dough in the prepared baking dish and bake for about 20 minutes, or until it starts to come away from the edges
Cover with a clean towel on a flat surface and dust with sugar
Make the filling: in a small saucepan over high heat, melt the passionfruit jelly, stirring for about 2 minutes. Reserve
Remove the cake from the oven and turn it out onto a flat surface
Spread the reserved jelly over the top
Use the towel to roll the cake into a larger cylinder
Serve immediately.
