In a bowl, mix the yeast and sugar
Add the milk, salt, eggs, melted butter, and gradually add the flour

Work the dough until it's homogeneous and no longer sticks to your hands
Cover the dough and let it rest for 15 minutes

Heat the olive oil in a skillet and sauté the onion
Add the tomato, sausage, and season with salt, pepper, and tomato sauce
Cook for five minutes
Let it cool

Roll out the dough with a rolling pin, forming a rectangle
Spread the mozzarella cheese and filling evenly
Roll up like a sausage roll and press the sides firmly

Place in a greased baking dish and let it rest for another 15 minutes
Brush the top with beaten egg and bake until golden brown.
