1 Debone the chicken and cut it into pieces
Cut the pecans into strips
Zest one of the oranges
Peel all, taking care not to waste the juice
Separate into sections, always holding the oranges over a bowl to collect the juice
2 Peel the ginger and finely chop it
Mix the orange juice (obtained by peeling the oranges) with olive oil, grated orange zest, and ginger
Season with salt and black pepper
3 Put the oranges, chicken, and pecans in a bowl
Add the dressing and mix gently
Let it rest for an hour before serving.
