1 cup of wheat for quibe
2 cups of parsley finely chopped
1/2 cup of green onion finely chopped
1/2 cup of fresh basil leaf finely chopped
1/4 cup of lemon juice
1/2 teaspoon of salt
1/4 teaspoon of black pepper
1 head of lettuce
1/4 cup of olive oil
3 ripe tomatoes, peeled and finely chopped
1 cup of wheat for quibe
2 cups of parsley finely chopped

1/4 cup of lemon juice
1/2 teaspoon of salt
1/4 teaspoon of black pepper
1 head of lettuce
1/4 cup of olive oil

Let the wheat soak in cold water sufficient to cover it for 1 hour
Drain and place on a cloth
Squeeze out all moisture
Mix with parsley, green onion, basil leaf, lemon juice, salt, and black pepper
Check seasoning and then refrigerate
Wash lettuce leaves and then refrigerate
When serving, line a salad bowl with the leaves
Add to the wheat mixture olive oil and tomatoes
Arrange in the salad bowl and, if desired, garnish with tomato slices and lemon wedges
