1 kg of cod

1 kg of tomato, seeds removed and cut into cubes

250g of black olives
3 cups of croutons

Soak the cod in water for a day or two, changing the water several times
Drain the water and bring it to a boil
Remove the bones and cut into pieces not too small
Heat the olive oil well and fry the garlic until golden
Place the fried garlic and olive oil in a large bowl; add the cod cut into pieces and the remaining ingredients, except for the croutons
Mix well and check the seasoning
Just before serving, add the croutons and mix carefully
Note: To prepare the croutons, shape the bread into cubes without crust and fry in hot oil
Drain on paper towels
If preferred, buy pre-made ones at supermarkets or bakeries
Serves 12 people.
