Step 1
Cut the cooked sweet potato into 1.5 cm thick slices and then in half
Cook the sausages for 10 minutes on a grill until golden brown
Slice the sausages

Combine the sausage with the sweet potato, red onion, bell pepper, and arugula
In a small bowl, mix together the balsamic vinegar and salt
Add the olive oil in a thin stream, whisking constantly until smooth
Season the salad with this dressing and serve.
