Peel the beets, wash them, and grate them on a coarse grater to get 4 cups
Set aside
Place the grated beets in a bowl and mix with the raisins
Set aside for now
Mix the mayonnaise with lemon juice, chopped parsley, salt, and a pinch of sugar, and pour this mixture over the beets
Mix well and refrigerate for at least 30 minutes to allow flavors to meld
Serve 4 to 6 portions.
