Divide the fish fillets into 6 portions and cut squares of aluminum foil large enough to wrap each portion
Wrap each square with washed spinach leaves, cover with a piece of fish, and add 2 1/2 tablespoons of coconut milk to each pack
Season to taste with salt and pepper
Close the pack well and bake in a moderate oven, preheated, for 30 to 40 minutes
Serve in 6 portions.
