Wash the lentils and cook them in salted water for 40 minutes
Drain
Cut the cooked ham and red bell pepper into strips
Combine with the lentils
Reserve a piece of red bell pepper to use as garnish later
Add the white onion, drained
With the vinegar, seasonings, mustard, and olive oil, prepare a salad dressing and add to the remaining ingredients, stirring lightly
Let the salad rest for 1 hour
Place in a serving dish and sprinkle with finely chopped celery stalks
