Combine the garlic and olive oil in a microwave-safe bowl
Microwave for 3 minutes on high
Add the eggplants, onion, and bell pepper
Stir to combine
Cover and cook for 12-15 minutes on high, stirring halfway through
Remove from heat and add remaining ingredients
Let cool
Serve at room temperature.
