1 cup grated Parmesan cheese
1/2 cup unsalted butter or margarine, softened and cooled
1 large egg, lightly beaten with
1/2 cup warm water
3 large garlic cloves, minced
coarse salt, broken into pieces
oregano or paprika

Mix the flour, yeast, salt, and Parmesan cheese in a bowl
Make a well in the center and pour in the butter or margarine, the egg mixture with water and garlic
Mix until all ingredients are combined
Knead the dough on a floured surface for about 5 minutes or until smooth
Shape into a rectangle of approximately 30 x 25 cm on a floured surface
Cut into strips of 25 x 1 cm using a pastry cutter or knife
Twist each pair and cut in half
Season with coarse salt, oregano or paprika
Assemble on greased baking sheets lined with parchment paper and bake at moderate temperature (180°C) for about 20 minutes or until golden brown
Yield: 21 crackers.
