Using an electric mixer, whisk together the milk, 3 tablespoons of flour, and yeast
Let it rest for 15 minutes or until slightly risen

Add the yolk, remaining flour, and heavy cream
Mix on low speed for 8 minutes

Beat the egg whites until stiff peaks form and gently fold into the dough mixture
Mix delicately

Heat a medium non-stick skillet with a flat bottom over medium heat
Grease with butter
Add spoonfuls of the dough, forming small pancakes

Flip and cook until the other side is also golden brown
Repeat until all batter is used up. Reserve
