12 large cooked crabs
1/2 cup grated gorgonzola cheese, crumbled
1/8 teaspoon sweet paprika
1/4 cup heavy cream
3 tablespoons apple cider vinegar
1/2 cup mayonnaise
8 toasted bread slices
shredded lettuce
1 large tomato, peeled and cut into 8 slices
8 black olives
2 hard-boiled eggs, passed through a sieve
1 tablespoon chopped fresh parsley
12 large cooked crabs

Finely chop 4 crabs and mix with the cheese, paprika, cream, vinegar, and mayonnaise
Cover each bread slice with lettuce, place a tomato slice on top, and spread the crab mixture over it
Place an olive in the center
Cut the remaining crab pieces in half lengthwise and arrange each half around the olive
Mix the eggs with parsley and season the sandwich edges
Assemble 8 sandwiches
