Process the olives, cheese, and ricotta in a food processor
Mix in the oregano and set aside

Place spoonfuls of the reserved mixture onto a slice of bread
Top with tomato slices and beef
Cover with another slice of bread
Repeat this process to form four sandwiches
Serve with apricots.
